Starting his career in his home country New Zealand at the acclaimed MacFarlanes restaurant group, Matty spent four years cutting his teeth in every aspect of the restaurant business.

His adventure in the UK started at Ottolenghi where he learnt the art of vegetable cooking. With a move to Brighton, he then spent 4 years at Terreaterre -with 2 of those as head chef - mastering the art of vegetarian cuisine.

Matty's style of vegetable cooking is a combination of world flavours combined with the best of British produce.

Matty is now at the forward moving restaurant group 1847.
